Quick tomato sauce

When the tomatoes come all at once in September, this is what to do with them. No peeling, no fuss.

How to make it

  1. Warm the oil in a pan and soften the garlic for a minute, don't let it brown.
  2. Tip in the tomatoes and a good pinch of salt.
  3. Simmer for 20 to 25 minutes, squashing them down, until thick.
  4. Tear in the basil at the end. Toss with pasta, or spoon over anything.
