Peas with mint and butter
Fresh peas barely need cooking. Half of them won't make it to the pot anyway, which is fine.
What you need
- A couple of handfuls of podded peas
- A knob of butter
- A few mint leaves, chopped (if you have mint)
- Salt
How to make it
- Drop the peas into boiling salted water for two minutes, no more.
- Drain and tip back into the warm pan with the butter.
- Stir through the mint and a pinch of salt.
- Serve straight away, as a side or stirred through pasta.
