Peas with mint and butter

Fresh peas barely need cooking. Half of them won't make it to the pot anyway, which is fine.

How to make it

  1. Drop the peas into boiling salted water for two minutes, no more.
  2. Drain and tip back into the warm pan with the butter.
  3. Stir through the mint and a pinch of salt.
  4. Serve straight away, as a side or stirred through pasta.
