Courgette, lemon and cheese
Picked small, courgettes are sweet and quick. This is barely a recipe, which is the point.
What you need
- 2 small courgettes, sliced into coins
- 1 tablespoon olive oil
- A squeeze of lemon
- A handful of grated hard cheese
- Salt and pepper
How to make it
- Fry the courgette coins in the oil over a decent heat until golden on both sides.
- Season with salt and pepper.
- Off the heat, squeeze over the lemon and scatter the cheese.
- Eat warm, on its own or alongside whatever else is on the plate.

Beans are the natural next step, they climb where the courgette sprawls.
